Tengo una duda . En un modulo anterior se mencionaba que some , era para expresiones afirmativas , para preguntas se usaba any ... acá el ejemplo dice : Would you lile some coffe? y me perdí :/
También se usa para hacer peticiones u ofrecer algo. Would you like some juice? Could I have some milk?

what is the difference in "Do" and "Would"?

Would you like more information? -> Is asking if the person wants to receive more information apart from the one she already received. In assumes we are talking about quantities. In that sense, you could also say: would you like more soup? Do you like more information? -> This is a "weird" question to ask, but if understood literally it is asking if the person likes or appreciates more information compared to what she already has. I say that it is weird in the sense that you don't like more information. In spanish it would be something like:
Si lo piensas, la segunda pregunta suena raro, porque es rara. Uno no pregunta si te gusta más de algo. Uno pregunta si quieres más de algo, que corresponde con Would like.
